Organic Living





Growing up in Michigan in a Polish, Catholic household I learned how to make meals from scratch. We had an amazing garden and I loved to pick ripe vegetables from it and bring them up the big hill in my basket. My mother always took us blueberry and strawberry picking in the summer and we made our own jams. We also put up a variety of pickles, dilly beans and stewed tomatoes for the winter. It was not until my freshmen year of college that I tried salad dressing out of a bottle or bought jam.It was a weird concept to me and it just did not taste good to me!


Looking back, I am so grateful for all of the time I spent with my mother in the kitchen. Helping her bake pumpkin pies from real pumpkins out of our garden and usually creating a huge mess for her to clean up! Now that I am a bit older I love cooking… mostly experimenting with whatever was available at the farmer’s market. Using only local , organic foods is inspirational and requires creativity. Fortunately mother nature produces foods that fit well together during each season. The universe intelligence shows us that foods that grow together in the same season should be cooked together, or consumed raw together. Purchasing food that has been shipped thousands of miles goes against the universe. These foods are depleted in nutrients and often riddled with toxic chemicals.



I am a huge proponent of buying local organic foods and eating as many of them raw as you can. Use them to make juice and green smoothies. Both have benefits and allow you to get high amounts of vegetables into your diet easily.  Experiment with different vegetables an easy way to start is by making vegetable soups, a high powered blender works really well for making soups.



Here are some things I have been making this winter:
1 Nut milk: I soak 1 -2 cups of nuts (almonds, walnuts, whatever it available at the farmer’s market) for at least 4 hours. I usually throw in a few crystals of Himalayan pink salt because it is a full spectrum salt containing 84 minerals. It helps restore electrolyte balance and tastes wonderful1 I then add 4 cups of water for every 1 cup of nuts and blend it in my Vitamix until smooth. I then put it through a hemp nut milk bag. Next I place the nut milk back in the blender with a pinch of organic vanilla bean powder, a few pitted dates and reblend it. Another lovely milk is chocolate walnut milk. I soak raw cacao nibs with the nuts and follow the same process above. You may use any type of nut or combination of nuts to make homemade nut milk. This process may be used to make rice milk. Unless you are buying organic, pastured, raw milk I recommend drinking nut milk instead of dairy.

2 Nut butter: Just like the nut milk you may use whatever nuts you can find at your local farmer’s market. Use at least 3 cups of nuts, with a couple of spoon full of organic coconut oil and a pinch of Himalayan pink salt. My measurements are never exact, I just go with whatever taste good! Use a high powered blender or food processor until you get the texture you desire. This is super simple and guarantees no hidden preservatives or unnecessary fake sugar has been added to your nut butter!  Slice open a date, remove the pit and spread some homemade almond butter inside, it is a tasty dessert!

3 Raw treats: Take a cup of raw organic cacao powder, a spoonful of organic vanilla bean powder, a spoonful of local organic raw honey, several pitted dates and a few organic coffee beans and blend them together. This is going to b super sticky! Roll the concoction into little balls and press a few crystals of Himalayan pink salt on top an place in the refrigerator. These little truffles take only minutes, are raw, and delightful!

4 Salad dressing: I never measure anything when I make dressing it is completely up to you and your taste buds to decide! Ingredients include: raw honey, real mustard, vinegar of your choice, organic cold pressed extra virgin olive oil, Himalayan pink salt crystals, pepper, garlic close and then something fun! The something fun can be berries, avocado, lemon, really whatever you want. Again this insures no added fake sugar and only takes minutes to blend together.

Digging Deep and Trusting Innate




Being congruent with the chiropractic lifestyle is an important part of living in alignment with your authentic self.  Finding that balance can be challenging, scary and difficult butconsistant  practice will bring you closer with whom you are meant to be.


Here is my truth
1 I love being a chiropractor, there is nothing else I would rather do with my life.
2 I am meant to serve the less privileged people of the world through chiropractic care.
3  I adore  sharing the chiropractic story through writing.
4 I truly enjoy speaking to large groups, as well as individually, to people about chiropractic.
5 The universe took my sight away to give me the vision and purpose in life.
6 I have SO much I wish to share with the world.
7 Heart space communication is how I innately connect with others, building a foundation of trust, love and understanding.



As I move into alignment with my authentic self I am experiencing normal human emotions. Am I following the correct path? Should I stay here? Should I follow my innate to the unknown? What is the right decision for me? It boils down to can I live with the decision I make and find joy in it?  Decisions need to be made for you and innate is the guide.



I know that heart space communication is best. This communication is most difficult when you feel alone but that is when you have to dig the deepest.  Can you find it in yourself to persist knowing that innate is always perfect and that it will guide you to the right decision? I keep saying I live with a  up fibrous root systems. I like them because I can pull up parts of them and take my experiences with me to my next spot along my journey. I thought I was wanting to set up a tap root system but I am beginning to think fibrous is perfect, for me. The way my mind works I am realizing I am not meant to sit still. When I am still I am bored. This does not mean that you should not take time to do important things like meditate, it means some people like the stress in life and thrive under it. I am totally one of these people.  My hands cannot be idol, they need to be adjusting people, writing or cooking beautiful organic food. My hands are my eyes and I cherish them. My hands allow me to do the things I love even though under all normal convention and social norms I cannot see.  It is the fibrous root system that has helped me gain so many amazing experiences and keeps me seeking  knowledge, with innate as the driver.


I am learning who I am right now at this point in my life. My authentic self is constantly peeking through the confusion and I am falling in love with my authentic self. I am digging deep to give when I do not think I have anything else to give. I love even when I do not feel loved. To trust innate when I am scared and to live a chiropractic lifestyle.

get INspired!




Inspire ME Today

Every morning I have an inspirational essay sitting in my email inbox. Several months ago I decided I wanted to be a featured luminary so I filled out the necessary information , responded to their prompt in 500 words and sent it off. I wrote the essay while studying for the last part of my national board exams and honestly did not remember what I had sent in. The day finally arrived , January 3, 2013 and I was so thrilled to read my own name in the subject line…”Today’s brilliance from Dr. Elizabeth M. Wisniewski”! At first I was a little nervous to read my own work, I have been going through quite a transitional period in my life and was unsure what I had just tossed out into the universe during my madness studying for boards. Finally I read it, then I read I read it again. Over the course of the day I think I read it around ten times. Each time it inspired me more to dig deep and deal with the emotions of becoming a doctor and starting a practice. I am realizing my dreams now however there is a lot of work to do!  My essay was like a secret note I wrote to myself, formed in my subconscious, knowing that I would need to read those exact words several months down the road. Perhaps as part of our gratitude journals, we should write ourselves notes and read them months or years down the road. I did not need to read anything else because the inspiration was inside of me the entire time! Recognizing our own brilliance is a challenge but each one of us has the power to reignite our own fire and to inspire others.

Head, Heart and Hands




Head, Heart and Hands

Chiropractic is best when it is defined by the triad of philosophy , science and art. This is often referred to as head, heart and hands. Just like in chiropractic we are constantly seeking balance, the same is true for the body. Chiropractors balance and restore proper flow to the nervous system through the chiropractic adjustment.  The nervous system controls every other system in the body so proper function is critical to a healthy life.



When I think of the first word in this triad “head” I know that I am fulfilling this portion of the triangle through reading and writing. Consistent reading of chiropractic text from the green books to modern publications is part of my weekly practice and obligation to chiropractic and future patients. Beyond chiropractic text I constantly seek knowledge from other sources like Mercola’s webpage and ‘All Things Healing’.  I believe that a constant thirst for knowledge is an essential part of life.  When people ask me about a certain food and which vitamins it contains I am often able to answer them with great confidence. This is because after buying something from my local farmer’s market or trying a new food I research it, adding that information to my database. I recommend reading articles from alternative news sources daily, reading actual books instead of ADHD inducing blurbs and writing several days per week.




The next part of this triangle is “heart”. I love chiropractic and serving people. It is this love that drives my quest for information and drives me to put my best intention into each person I place my hands on to adjust.  Communicating to patients from a place of love and respect.  I am a huge proponent of heart space communication. This requires you to be mindful and truly feel each feeling as it emerges. It allows me to use universal intelligence  to connect with another person’s innate intelligence and deliver an adjustment at the right time. A heart of service is a heart that is fulfilled in every capacity. Love what you are doing, communicate from a place of love and tell people around you that you love them. You can add this into your rituals by volunteering in your community or smiling at least one stranger each day.




The third part is “hands”. This is particularly special for me. I rely so much on my hands with the decrease in my vision. My hands are my eyes and careful palpation of the spine is where I feel most comfortable. My hands allow me to live my dream of being a chiropractor and knowing that I can be a doctor regardless of my so called limitations. Find your challenges and turn them into an asset. Embrace each sense and what it has to offer you.  Sit outside and close your eyes. Feel the blades of grass around you, what do they feel like? Not only does this help you tap into your inner child it also makes your more mindful.




Balance is difficult to find and can be even more challenging to maintain. It should be a constant practice in your life. Find your passion and do whatever it takes to achieve your dreams. I am so grateful for my head, heart and hands. I love my profession / lifestyle and look forward to serving people for the rest of my life through chiropractic.

Raw Milk Does the Body Good




The public has many misconceptions surrounding dairy, especially milk. IS milk healthy? Is raw milk safe? These are common questions asked. It is important to understand the process of pasteurization and how it alters the final product. Instead of naturally turning into  sour milk,  pasteurized milk becomes rancid quickly due to a high amount of pathogens. Top 5 Misconceptions about dairy

1 Calcium:
 The most common answer when people are  asked why they drink milk is ,”it is full of calcium.” Not only is this statement incorrect it is also harmful. The dairy council is an extremely large and powerful organization that contributes millions of dollars to its lobbying efforts as well as advertisements. They have tricked the public into believing the best way to get calcium into their diets, which is needed for strong bones, is through the daily consumption of milk.  Not only is the calcium in milk unavailable for the body to absorb the body also needs other minerals and vitamins to maintain a healthy skeleton.  Everything in the body works synergistically with other materials whether it is  vitamins, minerals  or other nutrients. There is never just one  solution , the body needs whole foods because they are complete. The calcium found in milk is not in a form that the body can absorb because calcium absorption takes place in the presence of other minerals like phosphorous  and magnesium. Furthermore, important enzymes are destroyed during the pasteurization process making absorption of Ca minimal.  Calcium is bioavailable in green vegetables , especially when you are eating local, organic vegetables. A diet high in raw veggies will provide more calcium to the body , in forms it can use, than pasteurized milk.
    

2 Vitamin D:
Milk is often fortified with Vitamin D. This means that they are adding in synthesized vitamins and they are not bioavailable .  Man made vitamins are not able to be absorbed by the body and are therefore a complete waste. The best way to optimize your vitamin D is to spend time in the sun. The body makes its own vitamin D in the skin ,kidneys and liver. This is the most natural way to get this very important vitamin necessary for a healthy skeleton and prevention of disease. Research shows that this vitamin may actually be a hormone an used in holistic cancer treatment. It causes apoctosis within days and has none of the negative side effects of conventional therapies. Pasteurized ilk is often fortified with vitamin A as well. These vitamins have to be added back in the pasteurization process because they have been destroyed. It seems ridiculous to destroy naturally occurring vitamins only to add back in their synthesized counterparts , which the body cannot use.  


3 Grain fed livestock:
The natural diet for livestock is not Monsanto corn. Cattle should eat grass and be able to exercise. All those key words like “organic”, “grass fed” and “ppastured”are important! Corn does not provide the nutrients to the cow especially when it is genetically modified corn. In addition to corn fed cattle they are also often injected with hormones and antibiotics. The hormones are used to triple the pituitary gland and cause the cow to produce more milk. Unfortunately all these chemicals from the hormone treatment and antibiotics end up in the milk and are then consumed. A cow raised in a feedlot or Contained Animal Feeding Operation (CAFO) are more likely to get sick for several reasons, including they are not eating their natural grass diet, they have no room to move around, the Earth is overwhelmed with their waste products. The reasons lead to why farmers and ranchers are forced to give the antibiotics. Feeding the cattle grains such as corn causes them to grow faster but instead of lean muscle mass being built there is a lot of fat. Claims that people want marbling in their meat is just one of the justifications used when defending the use of grain based diets.  Feeding grain is completely unsustainable in the long run and creates more pollution overall. Grass is a naturally sustainable source of food for the cows and contains many important vitamins and minerals.

   
4Pastruzation makes dairy safer:
 When milks pasteurized all of the enzymes are denatured and good bacteria is killed. Enzymes are important to breaking down larger molecules in order for the body to use them. Without the natural enzymes the healthy products in the milk are unable to be used by the body. Furthermore, the good bacteria are destroyed at high temperatures. Good bacteria is critical to a healthy gut flora and optimally functioning immune system. The gut should contain 85% good bacteria and 15%  bad bacteria. 


5 FDA has public safety as their top priority:
Although it may seem like the Food and Drug Administration has public safety as it’s top priority this is simply untrue. The FDA has a revolving door with the top executives at companies like Monsanto which clearly care more about profit than quality and especially more than public health. Researchers have found pain killers and antibiotics in the milk of CAFO cows. It is obvious that drinking this milk is dangerous.

 
Top 5 reasons to go raw
1 Protein:
Raw milk contains ALL 20 standard amino acids. This not only means that the body does not have to produce additional  amino acids but it also proves how raw milk is a complete food.  Additionally, raw milk contains over 60 enzymes most found naturally others made by friendly bacteria. Because of all of these beneficial aspects of raw milk it gets better as it gets older rather than going rancid like pasteurized milk.


2 Fats:
Raw milk is made up of mostly saturated fat which helps the body in many ways. Saturated fats are critical components of the cell membrane, create important cushioning for organs and are building blocks for hormones. The body cannot survive without fat and the misconceptions around saturated fat in today’s society is causing far more health problems then anybody realizes.  This is also what makes raw milk a whole food or complete food.  Along with that water, protein and enzymes the fat can provide a person with everything they need to survive and be healthy.
Raw milk also contains up to 5x more CLA which is an Omega6 fatty acid. CLA is much higher in rass fed, pastured cattle than grain fed cows and therefore is increased in raw milk.  CLA increases metabolism and also has some anti-cancer properties. There is a lot of research taking place currently on the benefits of CLA as part of a daily diet. It is important to have as close to 1:1 ratio of Omega3 to Omega6 in your daily diet. Although CLA is an important Omega6 fatty acid most food has too much Omega6 in it. The average American is around 1:14 Omega3 to Omega6. This leads to chronic inflammation and ultimately chronic diseases including cancer and autoimmune disease. Raw milk has the perfect ratio of Omega3 and Omega6 therefore it is actually anti-inflammatory unlike pasteurized milk which often increases inflammation. The pro inflammatory compounds in pasteurized milk irritate the GI system and often lead to symptoms like bloating and pain.

Eating organic, raw cultured butter is far healthier than eating fake , plastic margarine. There are many misconceptions around saturated fat in America. It is not in fact linked to heart disease. Heart disease continues to increase as Americans consume decreased amounts of saturated fat, so clearly this is not the answer. These fats are also important for developing nervous systems in babies. The nervous system the most important system in the entire body as it controls every other systems in the body.  So supporting its development is critical.
  
  
3 Probiotics:
Probiotics are one of the most important components to a healthy immune system. They are often destroyed by antibiotics and other antibiotic laced products including milk. Besides drinking raw milk, which is rich in healthy probiotics, other fermented dairy products like Greek yogurt, cultured butter  and kefir are a wonderful ay to get probiotic into your daily life. Since these good bacteria naturally occur in raw milk many  people who think that they are allergic to dairy are able to digest the raw milk without problems.  Raw milk can actually help people suffering from IBS and other GI system problems by helping to create a healthy balance in the gut.
  
4 Vitamins:
Raw milk helps the body  absorb other vitamins and minerals because it contains Activator X. When cows are raised in a CAFO they are milked up to three times per  day. This is more frequent than a cow raised in the pasture , foraging for food. Although a grain fed cow produces more milk the quality is seriously compromised. Cows only have a certain amount of vitamins they are able to transfer into their milk so milking them more frequently waters down the product. This is why grass fed milk and other dairy products will have a more yellow color because of the high amount of vitamin content.  Since the cows are not milked as frequently grass fed  milk will be more expensive but it worth the price difference knowing you are getting real vitamins that are totally bioavilable for the body. When a cow is raised in a CAFO they may be fed hay. This dried grass loses much of its vitamin and mineral content during the drying process and therefore the cow is not getting as many vitamins from the start
 This is another reason that grain fed cattle is less healthy than a grass fed cow.

5 Hormone / antibiotic free:
Raw milk is free from  hormones. Not only has the cow enjoyed a healthier, more natural life, they are able to transfer this vitality into their milk. Recently researchers found over 20 pain killers and other drug when sampling the milk from grain fed cows.
  

It is important that you purchase certified organic food in general. Dairy products are best when they are raw and organic. Grass fed is best and looking for the word “pastured” is even more important. Just saying grass fed is not good enough in today’s world. Simply grass fed means that the last few months of the cow’s life they may have been grain fed to fatten them up. Pastured insures that they spent their entire life grazing on sustainable grass.  It is a lot to look for but well worth the effort and extra money. Consuming raw milk, cheese and other dairy products will help you live a much healthier life. Raw milk is rich in important vitamins, helps decrease systemic inflammation and promotes overall immune system health through its natural source of probiotics.
